52 Weeks, 52 Verses--Week 52




Happy Sabbath Everyone!

Almost Christmas.  Almost the end of the year.  A new year coming.

A fresh start.

A new page.

A year with no sadness in it yet.

No loved one dying.  No horrific crimes committed.

But unfortunately, in this sin filled world we know the sadness will come.

As I sat in church today, the beautiful Christmas music washed over me.  It felt healing.  It was beautiful.  A few moments later, I found myself tearing up as I thought of my beautiful mother-in-law who is not here this Christmas season.

It was a hard year.  Not only for me, but for our country.  I know this new year will come with it's own challenges.  But I am not facing it alone.

My verse for this week:
"But I call to God, and The Lord saves me."  Psalm 55:16

Where ever I am.  What ever I am facing.  I will not be alone.  I can ALWAYS call to God.  And He will save me.  He promised.

52 Weeks, 52 Verses--Week 51




Good Morning Everyone!

Here we are--almost through this whole year!  Hard to believe, isn't it!

This past week--everything I did or thought, is completely overshadowed by the horrific killings that occured Friday at the elementary school in Conneticut.  My mind grapples with trying to make sense of it all--but of course, there IS no reason therefore there IS no making sense of it.  The whole thing makes me sick.  Literally.  Yesterday I could not help but be thinking of and praying for all those families who have lost loved ones--especially the children.  This is what Satan does--kills children.  And I want no part of him at all.

Praise God, our Savior is stronger than Satan, and He has already overcome evil.  Jesus paid the price on the cross, so we are no longer held as captives of sin.  Soon--He will come back for us.  Our sinful world will be made over.  And best of all, the Lifegiver who created those children in the first place will wake them up again--never more to experience any part of sin.

So--the verse for this week--I cannot even choose.  It is already chosen, and can only be this precious promise:

"For The Lord Himself will descend from heaven with a shout, with the voice of an archangel, and with the trumpet of God.  And the dead in Christ will rise first.  Then we who are alive and remain shall be caught up together with them in the clouds to meet The Lord in the air.  And thus we shall always be with The Lord.  Therefore comfort one another with these words."  1 Thessalonians 4:16-18

Someday, we will witness those precious children being reunited with their loving parents.  Now THAT will be a happy day!  And I want to be there with Jesus--I think I will be crying tears of joy.

I am a Happy Herbivore!--Part 3

At long last!  Here is the recipe I promised you from Lindsay Nixon's newest cookbook, "Happy Herbivore Abroad."  I haven't made this one yet myself, but it is definitely on my "To Do SOON!" list!  And I have not yet made a recipe from Lindsay's books that my family doesn't love, and I have all three of her books!

Blueberry Bundt Cake

Pronunciation tip
Bundkuchen sounds like “boondt-ku-hun” and Gugelhupf sounds like “google-hopf.”

The English word “bundt” is derived from the German Bundkuchen, also called Gugelhupf, a ring-shaped cake originating in southern Germany, Austria, and Switzerland.

Serves 12

2 c white whole-wheat flour
1 tsp baking powder
½ tsp baking soda
½ c raw sugar
1 c nondairy milk
¼ c unsweetened applesauce
1 c frozen blueberries

Icing
1 c powdered sugar
1 tsp orange juice
1 tbsp orange zest
nondairy milk, as needed

Preheat oven to 350°F. Grease a bundt pan and set aside. In a mixing bowl, combine flour, baking powder, baking soda, and sugar. Add nondairy milk and applesauce, then stir until just combined. Stir in blueberries. Pour batter into prepared pan and bake 25–40 minutes, until a toothpick inserted in the middle comes out clean. Meanwhile, make icing. In a small bowl, whisk powdered sugar with orange juice, zest, and nondairy milk as necessary until a runny glaze forms. Spoon glaze over warm cake and let run down the sides.

Chef’s Note: If you don’t have a bundt pan, a square 8- or 9-inch pan will work, but you will need to adjust baking time accordingly.

Take Time to Pray

52 Weeks, 52 Verses--Week 50




Good Morning Everyone! :)

It is a beautiful day today--I am so happy it is Sabbath and I can spend extra time with Jesus today.  A little slower pace.  A little more time for Bible reading, thinking, and reflecting.

Hard to believe we are at the end of this year.  I am finally getting in the habit of writing "2012" on my checks, and now they are going to change the date on me!! ;)

I found a gem in 1 Peter to share with you today.  There are quite a few wonderful promises hidden away in 1 Peter.  One doesn't hear a lot about this book of the Bible, but we should, because there are lots of neat things in there!  I chose one to share with you today that to me, just sums up all the others.  It is short and sweet, and includes really everything we need to do in just one sentence.

"Give all your worries and cares to God, for he cares about you."  1 Peter 5:7 NLT

No "ifs, ands, or buts."  Just plain and simple.  Worries--go to God.  Why--because He cares about me. I find it interesting that the verse does not read something like this:

Give all your worries and cares to God except for that one thing that you are in trouble for and it was your own fault since God already warned you about that and you did it anyway, for he cares about you when you obey him.

No.

It is not qualified.  There are no exemptions.

Whatever the worry.  Whatever the care.  Because HE cares, about me.  I don't deserve it, but He does anyway.

Mind boggling.

I can't explain it, because it does not make sense.

I don't deserve it, but He cares about me anyway.

He ASKS for me to give my worries to Him.

And the best part is--He's not worried about them.

He already has a thousand plans.

And He will not fail.

I am a Happy Herbivore!--Part 2



Hi Everyone!

See my "Happy Herbivore" smile?  I told you I was thrilled to receive this book!  Not only is it filled with tasty recipes, but even better--it is helping me to improve both my own health as well as the health of my family.  I consider THAT a very good investment!!!  My "don't-change-my-food" husband is 100% behind me as well.  It didn't take very many of Lindsay's recipes to convince him that eating whole food is not only tasty but helps you feel better too.

So, as promised, here is the interview with Lindsay that I promised!

Susan:  Lindsay, can you tell me how you became interested in healthy
eating?  You must have grown up eating a whole plant food diet, right?


Lindsay:  To my mom's credit, she did cook nearly every night (fast food and eating out was uncommon), but it wasn't whole foods or plant-based. Like most Americans, our family dinner revolved around a lot of meat, with one or two vegetable sides, covered in butter and maybe white pasta or white rice, also covered in butter. Since I grew up mostly a vegetarian out of a love for animals, I pretty much just ate the sides. 

I lapsed back to meat-eating in my late teens due to family pressure and peer pressure. A serious health scare in my early 20's brought me back to a vegetarian diet and about a year later I adopted a totally plant-based (vegan) diet. I was motivated mainly for health reasons, but I also care about the environment and am moved by the plight of farm animals.

In January this year, my parents joined me. My husband is also plant-based, and so is my sister. It's wonderful to see the whole family eating plants!



Susan:  Your recipes are based on the "L.E.A.F." plan--can you explain
exactly what that is?


Lindsay:  Low fat, Easy, Affordable, Fast recipes. I don't think eating well has to be expensive or complicated. I think it's realistic for everyone and that's what I try to show with my recipes. I use normal "everyday" ingredients. My recipes come together in 5-30 minutes. It's all about making healthy practical. I also advocate a low fat, no oil plant-based diet.



Susan:  What about olive oil?  Isn't that supposed to be good for you?
And what about nuts?  They are "whole food," yet high in fat.  Are
they still good  to eat?


Lindsay:  It's all clever marketing. Oil is so unhealthy. If you believe there is some magical property in olive oil, then it's also in the olive. Eat the olive.

Susan:  What about coconut oil?




 As for nuts/seeds/avocado, if you have heart disease or are trying to lose weight, you should not eat nuts, avocado or any added fats -- even whole, unprocessed added fats. "The fat you eat is the fat you wear." - Dr. McDougall. If you don't have heart disease, are active and do not need to lose weight, a few nuts or seeds on occasion is fine.

Susan:  Do you have any recommendations for someone wanting to change
their diet--is it better to change "cold-turkey," or to gradually
replace unhealthy foods with healthier versions?


Lindsay:  I've counseled hundreds of people making a switch and those who go "cold tofu" have the best experience by far.

Susan:  What if you are the only one in your family who is interested in
healthy eating?  Any recommendations on how a person can be successful
in that situation?
Do what's right by you and lead by example. I was the first in my family and now everyone is plant-based, even the dogs :)

Susan:  What about a person who wants to eat healthy--but has a HUGE sweet
tooth?  Is there any hope for them?  How can they overcome their sweet
tooth--or do they need to?


Lindsay:  You can have sweets on a plant-based diet -- but sugar is addicting so for some people, they have to totally go off it for a few weeks to break the addiction. Some people are so addicted they can never return to sugar. I found I wanted sweets a lot less when I cleaned up my diet. I eat fruit and that satisfies.

52 Weeks, 52 Verses--Week 49




Good Morning Everyone!

I have been thinking about inheritance lately.  As I have shared previously, my dear mother-in-law passed away very unexpectedly this Fall.  It was and still is a shock to all of us.  Hard to believe she is gone, even when I know it is true.

My mother-in-law was the kind of Grandma who was a wonderful "cookie-baker."  If you were at her house at Christmas time, she would fill several cookie jars with all the favorites of her loved ones who were visiting.  I liked to hang out in the kitchen with her, usually she would be re-filling those cookie jars because we had devoured the first batches she had made!  She had this little nut chopper that I always thought was the neatest thing.  I would tell her that I liked it, and she would laugh and tell me how it was really old.  It was simple--just a glass jar bottom with a screw type lid, and the lid had a little handle and a hopper area where you would put the nut halves in and then turn the handle and the nuts would be chopped and fall below into the glass jar part.  I liked it so much that I bought a nut chopper similar to it when I saw it in a store one day--but alas, it never worked as well as the one my mother-in-law had.

When Mom passed away, my sister-in-law asked me if there was anything special of Mom's that I would like to have.  I wasn't able to attend the funeral myself, and my sister-in-law offered to send something back with my husband if there was anything that I wanted.  Instantly I knew what I was going to ask for--if she didn't want it herself, I wanted Mom's nut chopper.  My sister-in-law was happy for me to have it, so they searched the kitchen and found it.  I have it now--not a regular "inheritance," I suppose, as it isn't something that Mom planned to leave to me, but it is something that reminds me of her each time I use it--which is almost daily.

But my REAL inheritance, what Mom REALLY left to me, was her example of a Christian life.  Her caring.  Her kindness.  Her thoughtfulness.

The verse I chose for this week is a verse about inheritance.  Not about receiving a nut chopper, but about receiving something much more precious.  Something Jesus left to us.

"All praise to God, the Father of our Lord Jesus Christ.  It is by his great mercy that we have been born again, because God raised Jesus Christ from the dead.  Now we live with great expectation, and we have a priceless inheritance--an inheritance that is kept in heaven for you, pure and undefiled, beyond the reach of change and decay."  1 Peter 1:3,4

Because of God's mercy--because of Jesus dying on the cross for MY sins--I have an inheritance in heaven.  It is kept safe for me, and one day I will receive it--eternal life with my Savior.

And I know Mom will be there too.
